It’s the Sunday before Thanksgiving, you open the freezer, and the turkey is a 16-pound block of ice. Is that enough time? Roughly four days is the upper end of the refrigerator estimate for that weight, so it’s workable but tight, and you’ll want a backup plan. Food safety agencies publish thawing times by weight, so you can plan instead of guess. Here is how long each safe method takes, and what to do if you’re behind.

Key Takeaways
- USDA’s Food Safety and Inspection Service lists three safe ways to thaw a turkey: in the refrigerator, in cold water, or in the microwave. The refrigerator is the recommended method, and the other two are for when time is short.
- Refrigerator thawing takes about one day for every 4 to 5 pounds, so a 20 to 24 pound turkey needs 5 to 6 days. Extension programs at Georgia, Nebraska, Wisconsin and Florida publish the same table.
- Cold water and microwave thawing both require you to cook the turkey immediately afterward. UF/IFAS says not to refreeze a turkey thawed those ways raw.
- A turkey thawed in the refrigerator can stay there 1 to 2 days before cooking, and can be refrozen if your plans change, with some loss of quality.
- USDA says it is safe to roast a solidly frozen turkey. Add 50 percent to the usual time, and do not smoke, grill, deep fat fry or microwave it frozen.
- Frozen poultry left thawing on the counter for more than 2 hours is not at a safe temperature, according to USDA and University of Nebraska-Lincoln Extension.
Use the refrigerator if you have enough time for your turkey’s weight. A large 20 to 24 pound turkey may need 5 to 6 days. If dinner is tomorrow, use cold water and plan to cook the same day. If the turkey is only partly thawed on cooking day, USDA says cold water or the microwave can finish the job. The microwave works only if your microwave’s instructions allow a turkey that size. For the next step, see how long cooked turkey can sit out and how long leftovers last.
How Long Does It Take to Thaw a Turkey?
USDA’s Food Safety and Inspection Service says to allow one day in the refrigerator for each 4 to 5 pounds of weight, and 30 minutes per pound in cold water. University of Georgia Extension, University of Nebraska-Lincoln Extension and University of Wisconsin Extension publish the same ranges by weight.
| Turkey weight | Refrigerator (40°F or below) | Cold water |
|---|---|---|
| 4 to 12 pounds | 1 to 3 days | 2 to 6 hours |
| 12 to 16 pounds | 3 to 4 days | 6 to 8 hours |
| 16 to 20 pounds | 4 to 5 days | 8 to 10 hours |
| 20 to 24 pounds | 5 to 6 days | 10 to 12 hours |
If your turkey sits right on a boundary, such as exactly 16 pounds, use the longer row. Oregon State’s 2009 estimates run shorter than USDA’s, so we followed USDA.
When Should You Start Thawing Your Turkey?

U.S. Thanksgiving falls on a Thursday. Plan backward from your turkey’s actual weight. Allow about 24 hours for every 4 to 5 pounds, or divide the weight in pounds by 4 for a cautious day count, then count back from Wednesday so the turkey is thawed a day early. These start days are our own planning suggestion, not an agency schedule. Thawing times are estimates, so check progress rather than assuming every bird of a given weight finishes on the same day.
| Turkey weight | Move it to the refrigerator by | Cautious thaw estimate |
|---|---|---|
| About 8 pounds | Monday | About 2 days |
| About 12 pounds | Sunday | About 3 days |
| About 16 pounds | Saturday | About 4 days |
| About 20 pounds | Friday | About 5 days |
| About 24 pounds | Thursday, one week before | About 6 days |
Don’t start a small turkey too early. Once a turkey is fully thawed, it can stay in the refrigerator for only 1 to 2 days before cooking, per Oregon State University Extension, Wisconsin and Nebraska. If it is still icy on Thursday, you can finish thawing it in cold water or allow extra time for oven roasting.
How Do You Thaw a Turkey in the Refrigerator?
Oregon State says to keep the bird in its store wrap on a tray, and Wisconsin Extension says to use a pan with raised sides. Keep the refrigerator at 40°F or below. University of Maryland Extension also reminds cooks to make sure the refrigerator has room for the bird.
We’d put the pan on the bottom shelf to keep drips away from other food. That is our suggestion, not an agency rule. We’d also check the temperature with a refrigerator thermometer.
How Do You Thaw a Turkey in Cold Water?
Use a leak-proof bag, submerge the turkey in cold water, and change the water every 30 minutes until it is thawed. UF/IFAS Extension and USDA both give 30 minutes per pound, so a 16-pound turkey takes about 8 hours. A quick way to figure it: divide the weight in pounds by 2 to get hours. Cook it immediately after it thaws.
Oregon State says the container can be a deep pan, an ice chest or a clean sink, as long as the turkey is fully covered. If the water warms up, it is no longer the method USDA describes.
Can You Thaw a Turkey in the Microwave?
Sometimes. Follow your microwave manufacturer’s instructions for turkey size, defrost power and timing. USDA gives about 6 minutes per pound as a general estimate. Remove the outer wrapping and use a microwave-safe dish to catch juices. Rotate and flip the turkey during thawing, and if it starts to cook, USDA says to let it rest about 5 minutes. USDA also suggests covering the wing tips and drumsticks with a small piece of foil, but use foil only if your microwave’s instructions permit it.
University of Nebraska-Lincoln Extension says microwave thawing is safe if the turkey is not too large. Cook it immediately afterward. Oregon State notes that microwave heating is uneven, and USDA says some areas may begin to cook. UF/IFAS adds that you shouldn’t refreeze or even refrigerate a turkey thawed this way.
Can You Thaw a Turkey on the Counter, in the Garage or Outside?
No. USDA’s guidance names thawing a turkey on the counter, in the garage or on the back porch as methods to avoid. Wisconsin Extension says to never thaw a turkey on the counter, because bacteria multiply quickly at room temperature. USDA’s Turkey Basics: Safe Thawing page says a package of frozen meat or poultry left thawing on the counter more than 2 hours is not at a safe temperature. It defines the outer layer as being in the Danger Zone between 40 and 140°F. UNL says the same about 2 hours.
Oregon State notes that bacteria multiply quickly on the warm outer surface of a turkey. A frozen center doesn’t protect the outer layers, which is why we wouldn’t count on a cold porch either.
How Long Can a Thawed Turkey Stay in the Fridge?
One to two days before cooking, per Oregon State, Wisconsin and Nebraska Extension. USDA says a thawed turkey remains safe in the refrigerator for two more days. If your turkey finishes thawing early, that is your window. Before the turkey goes in, clear and wipe down the shelf. Our Thanksgiving home cleaning checklist has the rest of the pre-holiday prep.
Can You Refreeze a Thawed Turkey?
It depends on how it was thawed. A turkey thawed in the refrigerator can be refrozen without cooking, although quality may decline, per USDA’s thawing page and UF/IFAS. A turkey thawed in cold water or the microwave should be cooked immediately, and UF/IFAS says not to refreeze it raw. USDA says meat from a cold-water-thawed turkey can be refrozen after cooking.
Can You Cook a Turkey From Frozen?
Yes, in the oven. USDA says it is safe to roast a turkey from the frozen state. Use the standard oven-roasting timetable for the bird’s size and add 50 percent to the time. USDA also says not to smoke, grill, deep fat fry or microwave a frozen turkey, and not to cook it in an oven cooking bag. Nebraska Extension says cooking from frozen is safe, and USDA says a partly frozen turkey takes a bit longer.
Commercially frozen, pre-stuffed turkeys work differently. USDA’s Let’s Talk Turkey guide says not to thaw them and to cook them from the frozen state.
Doneness works the same way either way. USDA says to check the innermost part of the thigh, the innermost part of the wing and the thickest part of the breast. UGA Extension says whole poultry should reach a minimum internal temperature of 165°F.
What If Your Turkey Is Still Frozen on Thanksgiving Morning?
You have two safe options. Cold water at 30 minutes per pound takes about 8 hours for a 16-pound turkey, and then you cook it right away. Or oven-roast it from frozen, adding 50 percent to the usual time. If the turkey is only partly thawed, USDA says cold water or the microwave can finish the job.
Oven-roasting from frozen is usually the faster route. Cold water adds roughly half an hour per pound before you start cooking, while cooking from frozen adds half again to the roasting time. That is our own math, not an agency figure, so compare it against your recipe’s time.
For questions on the day, USDA’s Meat and Poultry Hotline at 1-888-674-6854 lists Thanksgiving Day hours of 8 AM to 2 PM ET. Its regular hours are Monday through Friday, 10 AM to 6 PM ET.
How Can You Tell When a Turkey Is Thawed?
These are practical clues, not an official test. Check whether the legs and wings move freely and whether ice remains inside the cavity. Once it has thawed, Oregon State says to remove the neck and giblets. If you still find ice, or the bird feels frozen in places, allow more thawing time. Always use a food thermometer to check doneness.
Signs Something Is Wrong
- Thawed on the counter, in the garage or on the porch. USDA says not to thaw this way, and frozen poultry at room temperature for more than 2 hours isn’t at a safe temperature.
- Thawed in the refrigerator more than 2 days ago. The sources allow 1 to 2 days before cooking.
- Thawed in cold water or the microwave and not cooked right away. The sources say to cook it immediately.
- Uncertain time at room temperature. If the turkey may have been above 40°F for more than 2 hours, discard it. Don’t rely on a frozen center to decide.
We don’t suggest tasting a turkey to decide whether it is safe. Use time, temperature and a food thermometer instead.
Things That Don’t Automatically Mean Trouble
- A turkey that takes the full range of days. A 20 to 24 pound bird needs 5 to 6 days in the refrigerator.
- A turkey that is still icy after safe refrigerator thawing. It isn’t automatically spoiled, so finish thawing it safely or allow extra roasting time. Ice in the center doesn’t make a counter-thawed turkey safe.
- Pink meat in a fully cooked turkey. UGA says all turkey meat, including meat that remains pink, is safe as long as all parts reach 165°F.
Safe handling means controlling time and temperature during thawing, keeping raw juices off other food, observing the post-thaw storage limit, and cooking the turkey to 165°F in the recommended locations.
Quick Storage Reference
- Refrigerator: 40°F or below, about 1 day per 4 to 5 pounds.
- Cold water: About 30 minutes per pound, water changed every 30 minutes.
- Microwave: About 6 minutes per pound, if your microwave’s instructions allow a turkey that size.
- Thawed in the fridge: 1 to 2 days before cooking.
- Refreezing: Fridge-thawed only. Cold water and microwave turkeys get cooked first.
- Done: 165°F in the innermost thigh, innermost wing and thickest breast.
| Situation | What to Do |
|---|---|
| 16-pound turkey, two days before Thanksgiving, still frozen | Put it in the refrigerator now. If it is still partly frozen on cooking day, USDA says cold water or the microwave can finish thawing, followed by immediate cooking. A fully frozen 16-pound turkey takes about 8 hours in cold water, and a partly thawed bird needs less. |
| Turkey left on the counter overnight to thaw | Throw it away. USDA says frozen poultry left thawing on the counter more than 2 hours isn’t at a safe temperature. |
| Turkey thawed in the fridge, plans changed | Fine, if it is still within 1 to 2 days of finishing. It can be refrozen without cooking, though quality may decline. |
| Turkey thawed in the fridge 3 days ago | Discard it. That is past the 1 to 2 days the sources allow. |
| Turkey thawed in cold water, not cooked until tomorrow | Cook it as soon as possible. The sources we read say to cook immediately after cold water thawing and give no holding time, so don’t plan to hold it raw. If it already happened, call the USDA hotline. |
| Turkey thawed in a sink of hot water | Hot water isn’t a recommended method. If it already happened, call the USDA hotline with the time and temperature details, and don’t assume a frozen center means it is safe. |
| Turkey thawed in the microwave, cooked right away | Fine. That is what the sources say to do. |
| Still frozen on Thanksgiving morning, 16 pounds | Cold water takes about 8 hours. Oven-roasting from frozen takes at least 50 percent longer than a thawed bird. |
| Cooked turkey with pink meat, thermometer reads 165°F in all parts | Safe, per UGA, if every part reached 165°F. |
In October 2026 we read USDA Food Safety and Inspection Service guidance on thawing and cooking a turkey. That included its Turkey Basics, Alternate Routes to the Table and Let’s Talk Turkey pages, and its 2016 Thanksgiving tips release. We checked the times against six extension sources. They were University of Georgia Circular 1226, University of Nebraska-Lincoln (reviewed 2026), University of Wisconsin (updated June 2025), UF/IFAS Sarasota County (updated October 2024), Oregon State (2009) and University of Maryland. The refrigerator and cold water tables match across USDA and the extension sources except Oregon State, whose older estimates run shorter. The start-day schedule, the bottom-shelf tip, the thawed-turkey clues and the advice for a turkey that is still frozen on Thanksgiving morning are our own judgment. Our own suggestions say we’d or we suggest. This article is general information, not medical advice.
