Does Pumpkin Pie Go Bad? How Long It Lasts, Signs It’s Spoiled and Freezing

The pie that was perfect on Thursday night is still in the fridge on Sunday, and you’re staring at it. Pumpkin pie has an egg-and-milk filling, so it doesn’t follow the rules a fruit pie does. It has a shorter fridge life, a limit on how long it can sit out, and a freezer window that is about quality more than safety.

Does pumpkin pie go bad?

The short answer: Yes. FoodSafety.gov’s chart gives pumpkin pie 3 to 4 days in the refrigerator after baking and 1 to 2 months in the freezer for best quality. A pie made with eggs and milk shouldn’t be out of the refrigerator for more than 2 hours. Store-bought pies sold unrefrigerated may follow different rules, so check the label.

Key Takeaways

  • Homemade and bakery pumpkin pie lasts 3 to 4 days in the refrigerator, counted from baking day.
  • The freezer extends the time, but FoodSafety.gov’s 1 to 2 months is about quality, not safety.
  • Two hours out of the fridge is the limit. Overnight on the counter means the pie goes in the trash.
  • Looking and smelling normal doesn’t prove a pie is safe. The calendar and the clock matter more than your nose.
  • Some sources give refrigerated pies longer, up to seven days. We use FoodSafety.gov’s more cautious number for pumpkin pie.
Why Pumpkin Pie Spoils When Apple Pie Doesn’t
NC State’s Safe Plates food safety program says sugar and high levels of acid help prevent the growth of bacteria that can make us sick, which is why fruit pies are more forgiving. A pumpkin pie filling is built from different ingredients. University of Illinois Extension says pies made with eggs, cream, sour cream, cream cheese, or milk, “including evaporated or condensed milk,” need special care. Most pumpkin pie recipes sit squarely in that group, which is why the clock matters.

What Kind of Pumpkin Pie Do You Have?

Start with where the pie came from, because the sources treat each one a little differently.

Pie What the sources say What to watch
Homemade Iowa State University Extension: homemade and bakery pumpkin pies made with fresh ingredients should be refrigerated. FoodSafety.gov’s chart: 3 to 4 days after baking Count from baking day
Bakery pie made with fresh ingredients Iowa State: “the same procedure is true” for bakery pies made with fresh ingredients Ask the bakery how it was made
Store-bought, sold unrefrigerated Iowa State: the one exception, because these pies have shelf-stable ingredients and anti-microbial preservatives added The label and any date on it
Frozen pie you bake at home Marie Callender’s: after baking, cover and refrigerate the unused portion for up to three days The brand’s own directions
Pumpkin cheesecake or cream cheese pie Illinois Extension lists cream cheese among ingredients that need care. See our guide to cream cheese Treat it as refrigerated
Pie topped with whipped cream The pie and the topping have separate clocks. See our whipped cream guide Add the topping at serving time

How Long Does Pumpkin Pie Last in the Fridge?

FoodSafety.gov’s cold food storage chart lists “Pies: Pumpkin or pecan” at 3 to 4 days in the refrigerator after baking. That is a federal food safety chart, and it counts from baking day, not from the day you cut the first slice. A pie baked on Wednesday for Thursday dinner is at the end of its window by Sunday.

Brand guidance lines up with it. Marie Callender’s says, “After baking, cover and refrigerate unused portion to enjoy for up to three days.”

You may see longer numbers. NC State’s Safe Plates food safety program says pies that need to be kept in the refrigerator can be kept “up to seven days” if the fridge is at 41°F or colder. Both are published by credible programs, and they don’t agree. For pumpkin pie specifically, we follow FoodSafety.gov’s chart, because the gap between 4 and 7 days is the gap between a cautious number and a hopeful one.

Quality fades before the clock runs out. Iowa State University Extension notes that condensation under a wrapper leads to a soggy crust. Our guide to whether pumpkin pie needs to be refrigerated has the cooling method that avoids it. Our leftovers guide explains the general 3 to 4 day rule behind these numbers.

Can You Freeze Pumpkin Pie?

Yes. FoodSafety.gov’s cold food storage chart lists pumpkin or pecan pie at 1 to 2 months in the freezer after baking and notes that “the guidelines for freezer storage are for quality only.” Iowa State says a pie can be frozen “whole, half, or in slices” and keeps best quality for about 1 to 2 months. It says the pie “will remain safe beyond that time if kept constantly frozen at 0°F.” USDA’s leftovers guidance adds that frozen leftovers can lose moisture and flavor when stored longer.

The same chart lists custard and chiffon pies as “do not freeze,” but pumpkin pie has its own row, and that row allows freezing.

How to freeze it. Iowa State’s freezing guidance says pumpkin pie “can be frozen ready-to-bake or baked.” For a baked pie or slices, it says to cool them completely, then “tightly wrap the pie or pieces in plastic and aluminum foil to prevent freezer burn.” It recommends freezing for no longer than a month for best results, which is tighter than the 1 to 2 months FoodSafety.gov gives.

How to thaw it. The same page says to let the pie thaw in the refrigerator for at least 12 hours, and warns that thawing at room temperature causes condensation and a soggy crust. Marie Callender’s says not to refreeze a pie once it has completely thawed, and to refrigerate the unused portion for up to three days.

How Long Can Pumpkin Pie Sit Out?

Not long. Iowa State says homemade pumpkin pies should not be left at room temperature for more than two hours, because bacteria grow rapidly between 40°F and 140°F. Illinois Extension says pumpkin, cream, chiffon and custard pies should not be out of the refrigerator for more than two hours. In heat, USDA’s leftovers guidance shortens the window to one hour above 90°F.

That clock includes the time on the dessert table, so a pie that sat out all through dinner and coffee is already close to the line. Overnight on the counter is far past it. We cover the full set of rules in our guide to whether pumpkin pie needs to be refrigerated.

Signs Something Is Actually Wrong

  • Mold: Fuzzy or colored spots on the filling or the crust edge. Discard the whole pie.
  • A sour, yeasty or otherwise off smell: The pie is done.
  • A slimy or sticky surface: Discard it.
  • A watery pool on top or a runny filling: Treat it as a warning sign, but don’t judge safety by texture alone. Condensation can also cause it, so check the calendar and the clock.
  • Past 3 to 4 days, or out longer than 2 hours: Discard it even if it looks and smells fine.

No source we read lists spoilage signs for pumpkin pie, so this checklist is ours. A pie can be unsafe without showing any of these, so the calendar and the clock come first.

Normal Changes That Aren’t a Problem

  • A softer crust after a night or two in the fridge, which is a quality change.
  • A crack across the top of the filling, which is a looks issue.
  • A firmer, cooler filling straight from the fridge.

Quick Storage Reference

  • Refrigerator: 3 to 4 days after baking, per FoodSafety.gov.
  • Freezer: 1 to 2 months for best quality.
  • Counter: 2 hours, or 1 hour above 90°F.
  • Thawed: Keep it refrigerated and don’t refreeze it.
  • Store-bought and shelf-stable: Follow the label.
Situation What to Do
Baked Wednesday, now Sunday This is the end of FoodSafety.gov’s 3 to 4 day window. Finish it today or discard it.
Day 5 or later Past FoodSafety.gov’s window. Discard it.
Left on the counter overnight Discard it.
Sat on the dessert table for 3 hours Over the 2 hour limit. Discard it.
Slice in the freezer for 3 months Past FoodSafety.gov’s 1 to 2 months for best quality. Iowa State says it remains safe if kept constantly frozen at 0°F, though quality may have slipped.
Thawed pie Refrigerate it and use it within three days, as Marie Callender’s advises for its pies. Don’t refreeze it.
Unrefrigerated store-bought pie, cut and left on the counter Read the label. When it’s unclear, refrigerate it.
How We Checked This
In October 2026 we read FoodSafety.gov’s cold food storage chart and USDA’s leftovers guidance, extension guidance from Iowa State, Illinois, NC State and Penn State, and Marie Callender’s storage answers. Some extension pieces are several years old, so we leaned on FoodSafety.gov’s chart wherever they differed. We have not tested any pies ourselves. Where a source gives no number, we say so and don’t invent one. Check the label on the pie in your hand.

Does Pumpkin Pie Go Bad FAQ

How long does pumpkin pie last in the fridge?

FoodSafety.gov’s chart says 3 to 4 days after baking for homemade or bakery pumpkin pie. Marie Callender’s says up to three days after baking for its pies. Count from baking day.

Does pumpkin pie go bad if left out overnight?

Yes. The sources agree on a two hour limit, and overnight is many hours past it. Throw it out.

Can you eat pumpkin pie after 5 days?

We wouldn’t. FoodSafety.gov’s window is 3 to 4 days after baking. NC State gives up to seven days for refrigerated pies in general, but pumpkin pie has its own FoodSafety.gov row, and we follow that.

How long does store-bought pumpkin pie last?

It depends on how the pie was made and sold. For a pie sold unrefrigerated, follow the package directions and date information, as Iowa State advises. Once it’s cut, refrigerate the leftovers. A pie from a refrigerated case follows the homemade rule, and if the label is missing or unclear, keep it refrigerated.

How long can you freeze pumpkin pie?

FoodSafety.gov lists 1 to 2 months after baking for best quality. Iowa State says it remains safe beyond that if it stays at 0°F, though the texture may suffer.

Can you freeze pumpkin pie slices?

Iowa State says a pie can be frozen whole, in half, or in slices. Cool it completely first, then wrap tightly in plastic and aluminum foil.

Can you freeze pumpkin pie before baking?

Iowa State’s freezing guidance says pumpkin pie can be frozen ready-to-bake or baked. It adds that a thawed ready-to-bake pie can go straight into the oven, and may take a little longer to bake if the filling is still quite cold.

How do you thaw frozen pumpkin pie?

Iowa State says to thaw it in the refrigerator for at least 12 hours. Thawing at room temperature causes condensation that can leave the crust soggy, and it also leaves the pie out of the fridge, where the two hour limit applies.

Do you have to reheat pumpkin pie?

No. Iowa State says pumpkin pie is delicious served cold, right out of the refrigerator. We found no source that gives reheating times for slices, so we don’t give one.

Can you refreeze pumpkin pie?

No. Marie Callender’s says not to refreeze a pie that has completely thawed. Refrigerate the unused portion instead.

How can you tell if pumpkin pie has gone bad?

Look for mold, a sour or off smell or a slimy surface. A watery or runny filling is a warning sign too, but texture alone doesn’t prove spoilage. No source we read lists signs for pumpkin pie, so these are common warning signs, not a guarantee. A pie past its 3 to 4 days or its 2 hour limit should go, however it looks.

Can old pumpkin pie make you sick?

The reason extension programs give for the 2 hour limit and for refrigeration is that bacteria grow rapidly between 40°F and 140°F. We found no source that says what a spoiled slice will do, so we don’t guess.

Is underbaked pumpkin pie safe?

Iowa State says a pumpkin pie is done when it reaches 175°F in the center. FoodSafety.gov’s safe minimum temperature chart lists 160°F for egg dishes such as frittata and quiche, but doesn’t name pumpkin pie. A runny, wet center means it needs more time in the oven, so bake it longer rather than serving it.

Does pumpkin pie go bad faster than other pies?

Yes, compared with fruit pies. NC State says fruit pies have enough sugar and acid to resist bacterial growth. Pumpkin pie has an egg-and-milk filling instead, and FoodSafety.gov’s 3 to 4 days is the same figure it gives for pecan pie and for custard and chiffon pies.

Does canned pumpkin go bad?

Yes, once opened. See our guide on canned pumpkin. The pie you bake from it follows the pie rules above.

Does pumpkin pie need to be refrigerated?

Homemade and bakery pumpkin pies do. Read the full breakdown in our guide to whether pumpkin pie needs to be refrigerated.
