Food Lion always has great weekly specials. But do you also want to know what items are on sale as soon as you walk through the door? I’m not a great planner. And sometimes I’m so busy during the week that I forget my shopping list or forget to even put something I really wanted on that list. Food Lion must have read my mind. One of the first things I noticed on one of my recent trips to Food Lion was lots of bold and bright flags and stickers in colors like red, yellow, black and blue all over the store. Each one either says Hot SALE, WOW Savings or Low Price! Here’s what they mean:

Hot SALE These are the best MVP deals of the week! Don’t forget to sign up for Food Lion’s MVP in-store savings card for even more $$$ back on your bill. On a day I visited these green bell peppers below were a Hot SALE only .69 cents per pound. What a great deal!

WOW! Savings These are the everyday items you need but Food Lion has your back. They’ve lowered the price so they’re super affordable.

Low Price! These are the items you may only purchase once in a while, but when you do need them you can be sure they’re a great deal.

How about a recipe inspired by some great sales? On my last shopping trip, Food Lion had 1 lb. bags of Jumbo Shrimp as a buy 1 get 1 sale. That was $9.99 for two lbs. of shrimp. Awesome deal! They also had the bell peppers I mentioned before for $.69 per lb. I couldn’t pass these sales up. So, I thought why not whip up some delicious Shrimp Fajitas? It’s a quick and healthy meal for a weekday summer night. Keep it low carb and serve with guacamole and salsa, or serve along with tortillas. And don’t forget a few twists of lime and your favorite hot sauce to finish.

A quick and delicious fajita recipe that is perfect for a weekday dinner.

Course: Main Course
Cuisine: Mexican, Tex-Mex

Ingredients
  • 1 lb shrimp (extra large or jumbo), peeled
  • 3 tbsp. fresh lime juice, divided
  • 1 tsp. chili powder
  • 1/2 tsp. garlic powder
  • 3 tbsp. olive or grapeseed oil, divided
  • 1 large onion, sliced thinly
  • 2 large bell peppers. assorted colors and sliced into 1/4 inch strips
  • 2 tbsp. soy sauce
  • salt & pepper, to taste
Instructions
DIRECTIONS
  1. Mix the peeled shrimp in a large bowl with 1 tablespoon of lime juice, chili powder and season with salt and pepper. Let stand for 10 minutes.

  2. Heat an iron or heavy-bottomed skillet on medium-high heat. Add 1 tablespoon of oil and saute onions and peppers. Season with salt and pepper. Cook until slightly browned, the peppers are fork tender and the onions slightly translucent. Remove to a plate and set aside.

  3. In the same pan heated to medium-high heat, add another tablespoon of oil and cook the shrimp until the flesh is pink and the white part slightly opaque - about 1-2 minutes per side. Do not crowd the pan and cook the shrimp in batches if needed. 

  4. Once all the shrimp are cooked, add them back to the heated pan with the peppers and onions. Toss to combine together. Add the fresh lime juice and soy sauce to the pan tossing one more time. 

  5. Serve the shrimp fajitas with warmed tortillas, salsa, and guacamole for a delicious dinner! Enjoy!
