Translated from french, as “burnt cream,” this dessert is simple in its ingredients, but oh so heavenly. Wow your dinner guests, by serving this elegant dessert topped with the fresh berries of your choice. This is comfort food at its finest

Servings: 6

Ingredients:
2 cups heavy cream
4 egg yolks
1 vanilla bean scraped or 2 teaspoons vanilla extract
1/3 cup granulated sugar
1/8 cup turbinado sugar (for topping)
1/8 cup granulated sugar

Garnish:

Fresh Berries (Raspberries, Blackberries, etc)

Directions:

1_Preheat the oven to 275ºF. Pour the cream and the vanilla bean scrapings and pod nto a medium saucepan and scald and then Remove from heat and cool slightly.

2_In a separate bowl, whisk together yolks, ladling in some of hot cream mix slowly while continuing to whisk. Then add rest of whisked eggs to the cream in saucepan.

3_Add the 1/3 cup sugar, stir until dissolved.

4_Strain mixture into 6 ramekin until about 2/3 full.

5_Bake at 275 degrees in water bath (so water is about 2/3 up the side of ramekins) for about 1 hour or until set.

6_Once set remove from oven and continue to let sit in the waterbath for 10-15 minutes.

7_Chill ramekins for at least 4 hours or covered overnight in the fridge.

8_Before serving, preheat the broiler. Sprinkle each ramekin with sugar and slide under the broiler until sugar caramelizes becoming dark brown and bubbly.

9_Garnish with a fresh berry or two. Raspberries or blackberries work wonderfully.
