For an easy yet delightfully satisfying dinner, you can whip up these oven Roasted Italian Sausage, Peppers & Onions in around 30 minutes.  This dish is yummy along side pasta or served on a fresh loaf of Italian Bread.  This recipe can easily be doubled or tripled, making this Roasted Italian Sausage, Peppers & Onions a perfect food for parties!

SERVINGS: 4

INGREDIENTS

1 lb (16 ounce) package Sweet or Hot Italian sausage (6 links)
2 Green Bell Peppers
1 Yellow Bell Pepper
1 Red Bell Pepper
2 large Onions
1/4 cup Olive oil
1 teaspoon basil
1 teaspoon oregano
1 teaspoon garlic powder
1/4 crushed red pepper flakes
2 1/2 TBS Balsamic vinegar
Salt & Pepper

DIRECTIONS

1 – Preheat oven to 450°

2- Slice peppers and onions into approximately 1 inch slices and place in a large bowl. Add the olive oil, basil, oregano, garlic powder, crushed red pepper, salt and pepper. Toss the veggies well to coat.

3- Spread the peppers and onions on a large baking sheet lined with foil or a roasting pan. Roast veggies for 20-25 minutes or until they are niceley browned along their edges. Continue to check on the peppers and onions during the roasting process to turn the veggies over so they do not stick to the pan.  Just before removing from the oven drizzle with the Balsamic vinegar and carefully toss with tongs. Check to see if you may need more salt and pepper.

4- While the peppers and onions are roasting, place the sausages in a skillet or roasting pan and place in the oven. You can do this at the same time as the veggies. Cook for about 20 minutes, continuing to turn every 5 minutes or so until the sausages have a browned nicely on all sides. Once done, remove from the oven and drain the pan of any excess fat.  Add the roasted peppers & onions to the skillet with the sausages and toss together.

5.  To serve, arrange the sausages, roasted peppers and onions on a dish or serving platter.  Serve along Italian hero rolls so you and your dinner guests can make their own Sausage, Pepper & Onion Heros.
