For a healthy twist on a traditional donut, these easy air fryer donuts are made with protein-packed vanilla bean Greek yogurt and baked in the air-fryer. Then they're topped with a vanilla Greek yogurt icing and topped with sprinkles, just because. This super easy recipe will have you in guilt-free donut heaven in less than 30 minutes.
Preheat air fryer to 340° F. Mix dry ingredients in a medium bowl. Set aside.
Whisk wet ingredients (1/2 cup vanilla Greek yogurt, 2 tablespoons honey and 1 tbsp milk) in a small bowl until smooth. Then add wet ingredients to dry ingredients and gently mix with a fork.
Next, add wet ingredients to dry ingredients and gently mix with a fork. Once dough comes together, the dough should be a little sticky, but easy to handle. If it's too sticky, add a little more flour. If dry, add another splash of milk.
Cutting the Donuts
Transfer the dough to a lightly floured surface. Knead once or twice, then roll out to 1/2 thickness.
With a biscuit cutter (I used 2 5/8" size) or top of a drinking glass, cut out donut circles. For the donut holes, use a 1-inch cookie cutter. You can also use the end of a wooden spoon to poke through the middle of the donut using a circular motion to create a hole in the center.
Baking the Donuts
Spray both sides of the donuts liberally with avocado or coconut oil and transfer to air fryer.
Bake for 5 minutes or until puffed and just ever so lightly browned. Allow to cool slightly.
Making The Icing
To make the icing, stir powdered sugar with yogurt.
Dip the top of each donut in the yoghurt icing, top with sprinkles, and enjoy!
These donuts are best eaten just after air frying.
Notes
NOTE: The thickness of Greek yogurts can vary widely by brand. If your Greek yogurt is extra thick, you may need to add a little more milk to make your dough the right consistency.
